Welcome back to Foodie Tuesday! Today I'm sharing a really easy dinner idea with you. It's cheap, easy, and a great way to use up random stuff that you have in your fridge. Gotta love those dinners.
Last week I price-matched some great groceries and decided to make:
Loaded Baked Potatoes
So easy, no recipe involved, really!
You simply...
- Get yourself some cheap potatoes (I bought a couple of really big ones).
- Wrap them in foil,
- Stab with a fork a few times,
- Bake at 425 degrees for an hour or so (or until they are nice and soft. You'll know they are done by sticking them with a fork).
- Don't have a full hour? Stab your potatoes with a fork, DON'T wrap in foil, but microwave on high for 5 minutes. Flip the potato over, microwave 5 minutes more. Repeat until the spuds are cooked.
Once they are baked, top with fun toppings! We like:
- Cheese
- Bacon bits
- Green onion (chives)
- Yellow onion
- Sour cream
- Ranch dressing
- Garlic pepper seasoning
- Steamed broccoli
- Cheese sauce
- Chili
- Baked beans
- Corn
- Fried egg (so good!)
- Salsa
You can basically put anything on a baked potato.
Serve with a salad and you have yourself a filling and super cheap meal! And hey, depending on what you put on your potato, it could be pretty healthy for you. Just be sure to eat the potato skin; that's where all the nutrients are.
