Welcome back to Foodie Tuesday! Today's tip is super quick and simple, but you need to keep an open mind about it....aighty?
Today's tip:
Use Wendy's $1 baked potatoes for a last minute dinner side!
Ok, hear me out on this one, I swear I'm not crazy!
Last night I was rushing around trying to get the kids loaded in the car. (I had to run errands then drop them off at my husband's office so I could get to my hair dresser's in time for my appointment.)
It was 4:30 and I realized I had completely forgotten about dinner.
(Oh, if I could only learn to STOP letting this happen...)
I was getting a cut/color and wouldn't be home until much later, so my husband was hans-SOLO for dinner/baths/bedtime routine/etc. I needed it to be quick and easy, and needed it to be ready for him and the kids at dinnertime.
I opened up my freezer, saw a bag of frozen chicken wings from Costco, threw a bunch of them in a greased crockpot, dumped in some BBQ sauce and Winger's Original Wing Sauce (my husband's impulse purchase from Costco...), turned it on high....then was completely stumped.
I can't serve my family only wings for dinner.
What the heck do I have that can be ready to eat with wings?
...that can be put together in like, 30 seconds?
UGH.

My mom taught me this trick.
Just before dropping the kiddos off with my husband I drove through the glorious Wendy's drive-through, got a couple of $1 baked potatoes, and dinner was ready when he was!
Yes, it's fast food. However...
according to their menu they actually bake the potatoes for a full hour, and you can order them with all the butter/sour cream/fatty stuff on the side (or not at all). They also have side salads and chili.
The morals of my story?
- Don't wait until the last minute to plan dinner.
- BUT if you do...a quick, easy, and relatively healthy side for dinner is a baked potato!
And while it's much more expensive to buy a baked potato from Wendy's (I price-matched a 10lb bag of potatoes for $1 the other week) convenience is sometimes priceless.
So there you have it!
