Foodie Tuesday Recipe: Oh-So-Easy Cake Mix Cookies

Welcome back to Foodie Tuesday! Today's recipe is not only ridiculously easy, but it's foolproof and delicious. Perfection? Basically.


Cake Mix Cookies
Here's what you need:
1 Cake Mix   (any kind! Devil's Food is great, chocolate fudge, or any kind you like)
1/3C Oil
2 Eggs
Optional: Mix-ins (white or chocolate chips, nuts, chopped candy bar, etc.)

Here's what you do:
Mix first three ingredients. Add mix-ins (optional) until incorporated into the dough. Scoop into balls and roll into granulated sugar (optional). Bake at 350 degrees for 7-8 minutes. Be sure not to cook too long, the gooier the better! Enjoy :)

The recipe is so easy! I made them the other day for a neighbor and my husband couldn't get enough of them. Just mix everything together...

Add your optional mix-ins (I highly recommend Butterfinger!). This is a great way to get rid of that leftover Easter candy... 

Scoop them into balls (I didn't roll them into sugar this time because I added the Butterfinger. It's totally optional but adds a nice touch if you do just a plain cake mix with no mix-ins).

...And bake! 

I like to smoosh the tops down a bit. It helps them get that pretty cracking on top and helps them get a better "cookie" shape.

Be careful not to bake them too long!! They continue to bake a little bit once they are out of the oven, so go easy on them.

Cool them on a wire rack, and enjoy!
