Welcome back to Foodie Tuesday! I have another SUPER DELISH and super easy recipe to share with you. It's a great way to use up any leftover produce, french bread, and/or pesto that needs to be used up!
Chicken Pesto French Bread PizzaHere's what you need:
Chicken (I used one boneless/skinless chicken breast)
Vegetables of choice (bell peppers, green onion, and red onion are what I used)
Here's what you do:
Chop up your veggies. And easy way to chop bell peppers is to cut off the top like this:
Pull out the core and scrape out any leftover seeds,
and cut into strips. So easy!
Once you have all your veggies chopped, set them off to the side.
Cut your chicken into thin strips and set off to the side.
Take your french bread (I used leftover homemade french bread that I needed to use up) and split it open lengthwise. Put it on a baking sheet and broil it on low in the oven for a few minutes to lightly toast it.
Spread a desired amount of pesto on the toasted bread like so. Set aside.
Put a little olive oil in a pan and saute your veggies and chicken together on medium to medium-high heat until the chicken is cooked through and the veggies are soft.
I added a big plop of pesto to my chicken and veggies, which I highly recommend!
Add a little Montreal Steak seasoning to your veggies and chicken for flavor.
When your veggies are done, layer mozzarella cheese on top of the toasted pesto bread, then add your chicken and veggie mixture. I put parchment paper down on my baking sheet first to catch any toppings that might fall off during baking.
And, of course, top with more cheese.
Broil them on low for a few minutes (watch closely!) until the cheese is lightly browned and the pizza is heated through. You could bake them at 400 degrees for a few minutes if you prefer not to broil them.
And there you have it! This pizza was seriously so amazingly delish, we will make this again for sure.
